summer sausage breakfast biscuits

… Actually, they’re mini black pepper & sea salt summer sausage breakfast biscuits with a whole grain dijon mustard. Seemed a bit extreme for the post title, right? Well, no matter what we name them, we can always call them delicious. Make these. This weekend.

A venison recipe! At long (loooooonnnnggggg) last! As you know, we’d been out of venison for quite some time… And now? The proud owners off approximately 47.1 lbs of ground venison, 4 summer sausages, and enough snack sticks to satisfy the hungriest of hunters. Yes. I said 47.1 pounds. Recipes coming your way, I promise.

These little biscuits are so good – perfect to make the night before and snag on the way to the stand, or fresh out of the oven post-hunt. They don’t have to be “mini” either – that’s just the size biscuit I happened to buy. No, I didn’t make the biscuits from scratch… Whomp whomp. But I did jazz those store bought babies up with melted butter, black pepper, and a sprinkling of sea salt. Trust me, it works.

See what I mean? Much better than plain. Like I said, the biscuits I bought were on the the smaller side (not the jumbo ones), so I’d plan on 2 per person. That’s also the reason I only needed 8 eggs – one whole fried egg was just too big for these babies.

Look good enough to make you want to take up deer hunting (unless you already have, of course)? Check out what you need to get started, or keep going, in the deer stand over at Fin & Field.

Happy hunting (and eating)!
